The Best Soup When...

You're Sick.
 

Actually anytime is a good time to make my Granny's Carrot Cheese Soup. 
 
I am on day 8 of being sick. Yuck! The coughing, sneezing, aching, and sore throat kind of sickies. Boo - so much for that flu shot.
No, I can't blame the good ole flu shot, but it does stink non-the-less.
Anytime I'm sick, there is not much that sounds appetizing to eat, but Granny's Carrot Cheese Soup always seem to hit the spot.
I know I haven't done a recipe post in ages, but since I'm sick, I haven't been able to run around the mountains this week, which leaves for a bit more time on my hands.
 
 Carrot Cheese Soup (adapted from my Gran)
Ingredients:
2c. carrots, chopped and cooked
1c. chopped yellow onion
1c. milk
2 cans chicken or vegetable broth
1/2c. Bisquick or flour
1/2c. butter
2c. shredded sharp cheddar cheese
1/8 ts. salt or to taste
1/8 ts. pepper or to taste
1/8 ts. cayenne pepper or to taste

 
Directions:
1.) Saute onions, salt, & pepper with the butter on med heat.
2.) Add Bisquick or flour to sauteed onions. Stir for a couple minutes.
3.) Add chicken or vegetable broth and bring to a boil.
4.) Remove from heat add cooked carrots.
5.) Use a whisk and slowly pour in milk.
6.) Return to heat and slowly add in cheese, bring to a slow boil.
7.) Add salt, pepper, & cayenne pepper to taste.
8.) Serve with a crusty roll or pita chips and ENJOY!
