Lentil Cheese Burgers

I made these pretty tasty lentil cheese burgers at the beginning of the week and I have to say they are a great substitution for the original cheese burger. Even my meat lover sweetie pie Heinz thought they were good. Not only do they taste great, but they are loaded with protein and FIBER. Lets be honest, we could all us a little more fiber in our diets and adding lentils is a great way to do just that.

Swap your original cheese burger for a satisfying lentil cheese burger. Your digestive system will thank you.

Lentil Cheese Burger's
1 c. cooked lentils
1/4 c. flax seed meal
1/4 c. bread crumbs
1/2 c. cooked red potato
1/4 c. finely chopped celery
1/4 c. finely chopped yellow onion
1 beaten egg white
A few shakes of Worcestershire Sauce
A little S&P (salt & pepper)
4 slices sharp cheddar cheese

1.) Mash cooked (for added flavor cook in veggie broth) lentils and combine with flax seed meal & bread crumbs. (I used the back of a spoon, but a food processor would be easiest.)

2.) Combine all other ingredients (cooked potato, celery, onion, egg white, Worcestershire sauce, S&P) At this point I separated the combined ingredients into quarters, (but you could also do it in 6ths), and shaped them into 4 large patties using saran wrap.

3.) I pan fried them until golden brown (don't worry if they don't hold totally together). Added a slice a sharp cheddar cheese to the top and broiled them for 5 minutes. This really helped the burger hold together.

Put on a crusty roll, top with tons of veggies & enjoy!
