I originally wanted to make Janetha’s Lemon Yogurt Chiaseed Protein Muffins,
but I couldn’t find chiaseeds for the life of me. It was actually really bumming me out.
Instead of chiaseeds, I used poppy seeds as well as through in
a little flaxseed meal, zanthem gum, & a splash of vanilla almond milk and baked it in a 8x8 pan.
It turned out pretty good. It has a nice subtle lemon taste and the texture reminds me of sponge cake. Not too heavy and a little springy. It is a nice alternative to a regular lemon cake and it won’t do damage to your waistline.
