Happy Mardi Gras!
Being Fat Tuesday, I decided to celebrate by making a meal of Louisiana Red Beans with New Orleans Yellow Rice (Sans Animaux) followed with Bananas Foster for dessert. Delish!
Soak the red beans in water overnight.
Chop up the veggies.
Toss everything into a pot and simmer for at least 3 hours. Sip on a Mardi Gras Splasher (Ginger Ale & Grenadine) while you wait.
Cook the yellow rice and this is what you get...
Not the prettiest dish on the block, but man is it good.
Lets not forget the beloved bananas foster...
Serve over vanilla ice cream and watch out!
The Bananas Foster recipe consisted of:
2 firm bananas, 2 Tb. butter, 1/4 c. dark brown sugar, a dash of cinnamon & nutmeg, a squeeze of lemon juice, a splash of banana liqueur & dark rum AND a little fire for the finishing touches.

(For the Yellow rice, I cooked it in veggie broth for about 25 minutes.)
