Also know as a Casserole.
Heinz told me that if I NEVER made a casserole, it would have been a *“DEAL BREAKER”. Now aren’t we picky. Little did I realize that Heinz has been dying for me to make some type of casserole dish for ages. Whoops, I guess I never got the message.
Anyway, I have been really craving some comfort food like macaroni & cheese, so I decided to amp it up by doing a home style version loaded with veggies. It turned out pretty good except I forgot to make more of the sauce to compensate for all the veggies. It turned into a much healthier dish per serving than expected, which is great!

2 c. uncooked elbow macaroni
¼ c. butter
½ finely chopped yellow onion
¼ - ½ c. flour
½ ts. each of sea salt & pepper (or to taste)
½ ts. Each of ground mustard & Worcestershire sauce
2 ½ - 3 c. milk
2 ½ - 3 c. sharp cheddar cheese
2 c. each of broccoli & cauliflower
Bread crumbs (as much on top as desired)
1.) Pre-heat oven to 350 degrees F.
2.) Cook pasta until its el dente
3.) Blanch veggies
4.) Sauté onion in butter and Add flour, salt, pepper, ground mustard, & Worcestershire sauce. Whisk until thick.
5.) Add milk & bring to boil – stir as needed
6.) Add cheese & stir until smooth – constantly stirring
7.) Pour cheese sauce over macaroni & veggies & lightly toss.
8.) Pour in casserole baking dish and sprinkle bread crumbs on top.
9.) Bake for 20 min. covered with foil & and additional 5-7 min. uncovered.
Don’t let all the steps fool you, it really is a synch.
*Heinz was sort of kidding about the whole deal breaker business because this is my first casserole and we have been together for a while now.
