New Recipe, Hooray! I whipped up this tasty pesto- ricotta portobello burger topped with sauteed tomato, red onion, garlic, & olives. Served on a wheat ciabatta roll with baby arugula and sweet potato fries on the side. This recipe was fairly quick and easy to prepare. The toughest part was cutting the sweet potatoes to make the fries. The combination of flavors meshes well together making it a delicious and healthy dinner. You can get the full recipe here.
